This vegan peanut satay baked sweet potato is a staple in our home. Sprouts pair very nicely with the savory flavor. Try it with alfalfa, or our favorite, sunflower sprouts!
Bake sweet potato at 425º for 45-50 mins
1/3 cup peanut butter
1 tbsp tamari or soy sauce
1 tbsp maple syrup
juice of 1 lime
2 tbsp water
turmeric, paprika and fenugreek
Top the baked potato with sauce, add alfalfa sprouts, serve!
